As a Sous Chef, you are part of the management team for managing all aspects of the kitchen to deliver an excellent Guest and Member experience. A Sous Chef will also be required to ensure that all operational F&B Outlets are carried out properly. + Improve training manuals and SOPs, and ensure team members are knowledgeable about menu items, promotions, and events.
+ Participate in quality initiatives and team meetings to enhance culinary operations and communication.
+ Be aware of the dangers of contaminated food and ensure ingredients in the refrigerators are checked and replaced appropriately to preventing food contamination
+ Select, train, and monitor team members, ensuring they are certified and adhere to hotel regulations.
+ Ensure compliance with hotel rules, security, fire regulations, and team member handbook.
+ Ensure maintenance, hygiene, and cleanliness of workstations, addressing hazard issues promptly and Prepare the necessary work orders for the Engineering department.
+ Work closely with the Stewarding department to ensure high levels of cleanliness and low levels of lost and breakages
+ Maintain professionalism, a positive attitude, and good communication and work relationships.
+ Respond effectively to guests' requests, adapt to changes, and be receptive to feedback.
+ Coordinate and participate in kitchen production, maintaining recipe standards and portion control.
+ Assist with offsite events and tasks outside the kitchen, and help with inventory taking.
+ Stay informed about hotel occupancy, events, and forecasts.
+ Report issues to the Executive Chef and implement changes in recipes and work methods.
+ Promote teamwork to achieve departmental goals and standards.
+ Carry out additional duties as assigned.

**What You Will Be Doing:**
+ Ensure the efficient production of mise en place for service.
+ Prepare and serve a la carte/buffet breakfast, a la carte lunch/dinner & conference & events menus with creative flair
+ Maintain a clean and hygienic environment ensuring food safety standards are met.
+ Liaising with the culinary team on day to day operations and movements.
**Your Experience And Skills Include:**
+ At least three years of relevant experience or a trade qualification at Diploma Level or higher - ie Cookery or Hospitality ((ANZSCO Skill Level 2).
+ Excellent communication skills to liaise with the team in a vibrant environment.
+ The ability to work well under pressure ensuring standards are maintained.
+ Experience preparing and serving a la carte.
+ Knowledge of food safety standards and workplace health and safety
+ A trade certification or having completed an apprenticeship.
+ Previous experience in a hotel environment is advantageous.

**How You'll Shine**
As the Chef de Partie, you will be responsible for running the day to day operation of the kitchen, planning and designing menus that are in line with financial goals and is appealing to all guests, providing Food and Beverages in a timely and professional manner **.**
**How You'll Shine**
Responsibilities include, but are not limited to:
+ Place highest importance to food safety and hygiene of food preparation as outlined in the HACCP principles and the local guidelines for catering establishments.
+ Prepare, produce and present all foods in accordance with identified Food Hygiene and Health & Safety standards, commonly accepted in the catering industry.
+ Display eagerness to increase food knowledge and skills.
+ Strive to minimize food wastage.
+ Provide an exceptional Guest experience
+ Put forth your input on menus, rosters and any other issues that involves the team
+ Audits Kitchen stock & grocery lines daily & order stock as required

To be successful in this role, you will be:
+ Relevant trade qualifications or three (3) years of relevant experience (ANZSCO Skill Level 2) is desirable but not esstential
+ Fluency in English (written and verbal)
+ Previous Food & Beverage experience in a Hotel/Resort environment
+ A desire to deliver an exceptional Guest experience
+ An adaptive mindset and vision to deliver a quality product
